Long Fermented Sourdough Recipe

Double Chocolate Muffins

Ingredients:

  • 75 g sourdough starter (100% hydration)
  • 210 g whole milk
  • 200 g sugar
  • 230 g all-purpose flour
  • 50 g Dutch process cocoa powder
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 large eggs (room temperature)
  • 2 tsp vanilla extract
  • 1/3 cup (76 g) melted cooled butter
  • 1/3 cup (70 g) avocado oil
  • 150 g dark chocolate chunks or semi-sweet chocolate chips
  • 30 g turbinado sugar (for topping muffins before baking)

Equipment:

  • stand mixer with whisk attachment or hand mixer
  • rubber spatula
  • measuring spoons
  • food scale
  • microwavable bowl or pot

Directions:

  1. The night before baking, make the preferment by combining the sourdough starter, whole milk and sugar in the mixing bowl. Mix until well combined and the sourdough starter has dissolved.
  2. Add the all purpose flour to this. Mix until well combined and no dry spots remain. Cover and leave overnight at room temperature.
  3. The next morning, bring 2 eggs to room temperature. Melt butter and set aside to cool.
  4. Preheat the oven to 365 degrees F.
  5. To the preferment mixture, add the baking powder, baking soda, salt, eggs, vanilla extract, melted butter and avocado oil.
  6. Mix the stand mixer or hand mixer, whisk on medium speed for about 1 minute. Using the rubber spatula, scrape the bottom of the bowl. Resume mixing on medium speed until the batter is a smooth consistency with no lumps (about 30 seconds-1 minute).
  7. Add the cocoa powder and mix on low speed until combined.
  8. Ensure the batter at the bottom of the mixing bowl is well incorporated.
  9. Fold in the chocolate chips with a rubber spatula until evenly dispersed.
  10. Line a 12 count muffin pan or spray well with cooking spray to avoid sticking.
  11. Add batter to the rim.
  12. Top each muffin with turbinado sugar.
  13. Bake muffins at 365 F for 20-22 minutes or until the center of the muffins are cooked through.
  14. Transfer muffins to a wire rack to cool. Enjoy these long fermented sourdough muffins!
